Cucumber Dill Soup with Smoked Trout
Ingredients
Procedure
For 2 people
2 cucumbers, peeled and chopped
1 rib celery, chopped
½ vidalia onion, chopped
1 cup    lowfat yogurt
1 tbsp dill, chopped
½ tsp cumin, ground
¼ tsp cayenne
½ cup sour cream
to taste salt and pepper
¼ cup smoked trout, julienned (duck trap brand at whole foods market is excellent)
2 dill sprigs
  1. Blend all ingredients except smoked trout and 2 sprigs of dill  

  2. Season  with salt and pepper

  3. Garnish with the smoked trout and dill sprigs
