Flank Steak with Soy Ginger Marinade

This recipe was created for an inexpensive cut of meat known as a flank steak or London Broil.  It was a popular item on Les Auteurs' lunch menu. The marinade tenderizes the meat and gives an Asian flavor.  An important trick in serving this dish is to slice the meat thinly on the bias, ensuring tenderness.

For 2 people
1 cup soy sauce
1 tsp ginger, freshly grated
2 tbsp orange marmalade
1 clove garlic, minced
1 lemon, juiced
1 orange, juiced
2 - 8 oz flank steak
½ cup olive oil
  1. In a shallow bowl, whisk together the soy sauce, ginger, marmalade, garlic, lemon juice, orange juice, and olive oil  

  2. Marinate the flank steaks in the marinade for one hour, turning over once or twice  

  3. Grill the flank steaks to medium rare on a preheated grill  

  4. To serve: slice the steaks on the bias and serve with  Corn Salsa- see recipe on web site
