Chef Ricardo’s Tequila Salsa (Sauce)
Chef Ricardo, chef of the five star hotel in Arandas Mexico, made this sauce for me on TV while we were filming a " Famie's Adventures In Cooking" news segment. They call it a salsa we would think of it more as a sauce. The word salsa means sauce in Spanish. It is really good and worth the preparation.
Ingredients
Procedure
Makes 1 quart
¼ cup olive oil
1 onion, white
2 cloves garlic, chopped
6 tomatoes, vine ripened, diced
2 pasilla chilis, dried
1 ancho chilis, dried
2 cups water
1 slice white bread, dried
2 oz tequila
to taste salt and pepper
  1. In a 2-quart saucepot, add olive oil  

  2. Sauté the onions, garlic, and tomatoes  

  3. Add the dried chiles broken up, seeds and all  

  4. Sauté for 3 minutes  

  5. Add water and let simmer for 5 minutes  

  6. Add bread and stir in well.  

  7. Add everything to a blender and blend until smooth  

  8. Pour through a fine strainer  

  9. Add tequila to the strained sauce and simmer for 2 minutes  

  10. Season and serve

·       Here’s a hint: It’s great on eggs that have been scrambled with cilantro and cheese
